Caramelized Banana with Mixed Berry Sauce

  • ✓ 1c frozen or fresh berries
  • ✓ 3t monk fruit extract (less if wish; more if want sweeter)
  • ✓ 1t tangerine (or 1⁄2 t lemon) juice
  • ✓ Pinch or two of cinnamon
  • ✓ (optional) 1t 3/8” citrus zest, 1⁄4 t minced ginger
  • ✓ (optional) 1⁄2 t vanilla extract
  • ✓ Banana (1 medium or large banana per serving)
  • ✓ (optional) 1⁄2 t cacao nibs
  • ✓ (optional) 2-4t pomegranate molasses
  • ✓ (optional) Few pinches of cocoa
  1. Put all of the ingredients except for the vanilla and banana into a stainless steel pan and, over medium heat, bring so it liquifies, mashing periodically with a spoon or spatula; it should take just a few minutes
  2. Reduce heat to low and then simmer for 4-6 minutes (or even 10+ minutes if you want thicker) to thicken to desired consistency (it will thicken even more as it cools), periodically mixing
  3. (optional) If you want an even thicker sauce you can add 1⁄2 - 1 t arrowroot or cornstarch
  4. (optional) Mix in vanilla

While the berries are cooking:

  1. Cut bananas into thirds lengthwise (diagonally) and then half them
  2. In a stainless steel griddle or pan cook flat side down on medium-low heat for 30 seconds or so, then turn
  3. Rock periodically for a minute or more
  4. Flip again and squeeze half or a full tangerine to deglaze the pan and capture more of the caramelized flavor

Serve the banana pieces (pieces from one banana per one serving) topped with berry sauce. Optionally add cacao nibs, maybe pomegranate molasses, and sprinkle with cocoa. Use one banana per serving; the sauce quantities are good for about 4 servings.
