Brocoli Salad

For the salad:

  • 2 large broccoli crowns (florets only), bite size

  • 2 cups red grapes, halved

  • 1⁄2 cup diced red onion

  • 1⁄2 cup dried cranberries or raisins

For the dressing:

  • ✓ 1 cup raw cashews (helps if soaked for a couple of hours)
  • ✓ 1⁄2 cup water
  • ✓ 2 tbsp pure maple syrup
  • ✓ 2 tbsp apple cider vinegar
  • ✓ 1 cloves of garlic
  • ✓ Salt and pepper to taste.
  1. Add all dressing ingredients to a to blender and blend until completely smooth and creamy.
  2. Place chopped broccoli, grapes, almonds, red onion, and dried cranberries in a medium or large mixing bowl.
  3. Add dressing and toss thoroughly to coat. Season with salt and pepper to taste

NOTES:

- We love garlic, so I tend use 2+ cloves in this recipe when I make it just for us
- For extra crunchiness, add in some nuts or seeds of your choice right before you serve it, otherwise they get soggy
