Ingredients
DRY INGREDIENTS
✓ 1 cup oatmeal flour ( i grounded old fashioned rolled oats 1 cup )
✓ 1 cup all purpose flour
✓ 2 1⁄2 teaspoons baking powder
✓ 1 teaspoon baking soda
✓ 1⁄4 teaspoon salt **optional
✓ 1⁄4 cup raw cane sugar
✓ sift into a large bowl and set aside.
WET INGREDIENTS
1) To make the plant-based unbutter milk mix these ingredients
1 cup unsweetened soy milk
2 tablespoons lemon balsamic vinegar or lemon juice.
combine and set aside
2) in a separate bowl combine
1 cup unsweetened applesauce
1 teaspoon vanilla extract
mix until combined
3) measure out
1 cup blueberries
1 cup cranberries
Instructions
Preheat your oven to 350’ F
Add the wet mixture number 2 to the dry mixture and mix until incorporated, now add the unbutter plant-based milk (wet ingredients number 1).
Mix to form the batter, and gently fold in the berries.
scoop 1⁄4 cup of batter into a lined cupcake tin and bake for 30 - 35 minutes. depending on your oven.
Enjoy warm or at room temperature.
