DRY INGREDIENTS

  • ✓ 1 cup oatmeal flour ( i grounded old fashioned rolled oats 1 cup )
  • ✓ 1 cup all purpose flour
  • ✓ 2 1⁄2 teaspoons baking powder
  • ✓ 1 teaspoon baking soda
  • ✓ 1⁄4 teaspoon salt **optional
  • ✓ 1⁄4 cup raw cane sugar
  • ✓ sift into a large bowl and set aside.

WET INGREDIENTS

 

1) To make the plant-based unbutter milk mix these ingredients

  • 1 cup unsweetened soy milk
  • 2 tablespoons lemon balsamic vinegar or lemon juice.
  • combine and set aside

 

2) in a separate bowl combine

  • 1 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • mix until combined

 

3) measure out

  • 1 cup blueberries
  • 1 cup cranberries
  1. Preheat your oven to 350’ F
  2. Add the wet mixture number 2 to the dry mixture and mix until incorporated, now add the unbutter plant-based milk (wet ingredients number 1).
  3. Mix to form the batter, and gently fold in the berries.
  4. scoop 1⁄4 cup of batter into a lined cupcake tin and bake for 30 - 35 minutes. depending on your oven.

Enjoy warm or at room temperature.
