Description

This is a delicious chocolate pudding, which reminds me of my youth when the Black Forest Cakes were in fashion. I adapted this recipe from Dr. Greger’s How Not to Diet Cookbook (page 198). This recipe is versatile, you can substitute the cherries with other berries or fruits as well.

Makes 2 servings (about 1 cup each or 4 smaller servings)

  • ✓ 1 1⁄2 cups pitted fresh or frozen cherries (I used sour cherries)
  • ✓ 1⁄2 cup mashed ripe banana (approximately 1 banana)
  • ✓ 1⁄2 cup of water or plant- based milk (I often use soya milk)
  • ✓ 3 tablespoons unsweetened cocoa powder
  • ✓ 2 pitted soft dates (soaked for 10 minutes in hot water, then drained)
  • ✓ 2 tablespoons of ground chia seeds
  • ✓ Optional garnishes: fresh pitted cherries or berries, slivered almonds, cocoa nibs, or whipped aquafaba.
  1. Put all ingredients in a high-speed blender and blend until completely smooth.
  2. Divide into 2 bowls or jars.
  3. Cover and refrigerate for 8 hours or overnight.
  4. Serve as is or with a garnish of your choice.

Note: Let’s minimize waste - Once you pour the pudding mix into your serving dishes,
add some more plant-based milk to the blender jug and whiz to capture the rest of the
goodies left behind. It makes a yummy refreshing drink
