Berry Good Breakfast Parfaits

Description

A parfait is a layered treat, usually consisting of layers of fruit, whipped cream or custard, and granola or crushed cookies. For this healthy breakfast parfait, we are using berries, a tofu/cashew cream, and a quick homemade granola. Enjoy!

Creamy layer

  • 1 12.3 oz container firm or extra firm silken tofu
  • 1⁄2 cup cashews, boiled for 10 minutes or soaked for several hours to soften
  • 1 T agave nectar or maple syrup
  • 1 tsp vanilla powder or extract
  • 1⁄2 tsp almond extract
  • 1 tsp fresh lemon juice

 

Granola layer

  • ✓ 1⁄2 cup raw almonds, coarsely chopped
  • ✓ 1⁄2 cup raw walnuts, coarsely chopped
  • ✓ 1⁄2 cup raw pecans, coarsely chopped
  • ✓ 1⁄4 cup raw pumpkin or sunflower seeds
  • ✓ 1⁄2 cup whole rolled oats
  • ✓ 1 tsp cinnamon
  • ✓ 3 tablespoons pure maple syrup or date syrup (or date paste)
  • ✓ 1 tsp vanilla extract
  • ✓ Couple of drops of almond extract (optional but very tasty)
  • ✓ Pinch of salt

Fruit layer

  • Favorite berries - chopped strawberries, blueberries, raspberries, cherries, mulberries
  • Other chopped fruits, as desired (ideas might be diced fresh peaches, banana, apple, pears)
  1. For creamy layer, whirl all ingredients in a high speed blender until smooth and creamy. Set aside in the refrigerator to chill.
  2. For the granola layer, line a rimmed baking sheet with parchment paper and heat the oven to 350’ F.
  3. Place all nuts and seeds in a large bowl and add oats, cinnamon, and pinch of salt. Stir well to combine.
  4. In a separate bowl, mix maple syrup with vanilla and optional almond extracts. Stir and pour over the nut/oat mixture in a large bowl. Mix until nuts and seeds are coated with maple syrup mixture.
  5. Spread evenly on a baking sheet and bake for 12-14 minutes, stirring halfway through.
  6. Allow to cool for at least 10-15 minutes before assembling parfaits.
  7. To assemble parfaits - in a clear glass jar or cup, layer fruit, creamy filling, and granola in any order that suits your fancy! Refrigerate for a few hours to chill, or enjoy immediately.
  8. Will keep in the refrigerator for about 5 days if covered or sealed with a jar lid.

Notes - for a yummy fall treat, sub 1/4 cup almond butter for cashews in the creamy layer, and add 1⁄2-1 tsp cinnamon instead of lemon juice. Use maple syrup instead of agave, and layer parfait with chopped apples and pears instead of berries. More notes - to make this faster and easier, substitute store-bought non-dairy yogurt for creamy layer and/or store bought granola for homemade.
