Bento Box Lunches and Lemony Pesto Hummus Wraps

What is a Bento Box?

The ancient Japanese tradition of packing a meal into a bento box – a decorative container with small compartments – has caught on around the world. Bento box lunches are great for controlling portions and keeping food items separated into each compartment.  Bento boxes are great for work and school lunches, so adults and kids will like them! It’s fun and easy to get all the ingredients of the power plate (fruits, vegetables, grains, beans) into each compartment.

LEMONY PESTO HUMMUS WRAPS (oil free)

  • ✓ For hummus
  • ✓ ½ cup fresh basil leaves
  • ✓ ¼ cup walnut pieces
  • ✓ 3 T nutritional yeast
  • ✓ 2 cloves garlic
  • ✓ 1 ½ cups chickpeas (one 15 ounce can, drained)
  • ✓ ¼ cup tahini
  • ✓ ¼ to ⅓ cup fresh lemon juice
  • ✓ ¼ tsp smoked paprika (optional)
  • ✓ Dash of iodized sea salt

For wraps

 

  • 4 whole wheat tortillas, approximately 6”

  • Sliced bell pepper, red and/or green

  • Shredded carrots

  • Shredded cucumber

  • Lettuce or spinach leaves

  • Micro-greens

  • Chopped fresh tomato

for hummus

Blend all ingredients in a food processor until smooth, adding water a tablespoon at a time if needed. For a milder flavor, roast the garlic cloves ahead of time (optional)

 

for the wraps

  1. Spread a few tablespoons of hummus on each tortilla and top with your choice of fresh sliced and shredded vegetables.
  2. Roll up and cut into rounds. Makes a great lunch or yummy afternoon snack!

Add rounds of the wrap to the bento box compartment and fill other compartments with fruits, dried fruits, nuts, crackers, raw veggie slices, cherry tomatoes, popcorn, etc - make it your own!
