Beans, Rice, and Guacamole

  • ✓ 1 cup black or other beans
  • ✓ 3 T onion (chopped about 1⁄4” pieces)
  • ✓ 1 1/3 cups brown rice (If you can, soak the rice for 48hrs or at least overnight and once or twice drain the water and add fresh water. This helps reduce any small amount of arsenic, which isn’t good for us)
  • ✓ 2 ripe avocados, I can tell when an avocado is ripe if it is slightly squishy
  • ✓ 1 t. lemon or lime juice
  • ✓ 1⁄4 t. salt
  1. Prepare beans or buy canned beans.
  • Cook the rice:
  1. Rinse the rice and put it in a pot with twice as much water and a pinch of salt.
  2. Bring it to a boil and then reduce the heat and simmer, tightly covered. Do not open the top; the rice cooks with the steam.
  3. Cook for 50 Minutes and then remove from the heat but keep it covered.
  4. After 5-10 minutes, fluff the rice with a fork or spoon.

 

  • Make the guacamole:
  1. Cut the avocado in half the long way and twist; the pit will be left with one of the halves.
  2. Scoop all the flesh out from both halves into a bowl and immediately add lemon juice. The nice green color will oxidize into a not so appetizing brown if you don’t add an acid like lemon juice.
  3. Mush the avocados and add the onion and salt.
