Apricot Vinaigrette / Paste

Makes: 1 cup

Apricot Vinaigrette

  • ✓ 1/2 cup white balsamic vinegar (I use The Olive Tap White Riserva)
  • ✓ 2 tablespoons of Annie's Horseradish Mustard
  • ✓ 1/4-1/3 cup Apricot Paste
  • ✓ 2-3 tablespoons of water
  • ✓ Salt & pepper to taste

Makes: 2 cups

Apricot Paste

  1. 2 cups dried apricots

  2. Boiling water

  3. Zest of 1 lemon

  4. Juice of 1 lemon

  5. 1 tablespoon grated ginger (optional)

Apricot Vinaigrette

  1. Whisk all ingredients together.

  2. Refrigerate and store in an airtight bottle for up to 10 days

 

Apricot Paste

  1. Place 2 cups of dried apricots in a glass bowl; cover with boiling water.
  2. Allow to soak for 30-45 minutes until soft.
  3. Place the soaked apricots and water in a blender; add zest and juice of one lemon to the mixture.
  4. Blend on high until completely smooth.
  5. Refrigerate in an airtight jar for up to 4 weeks.

Note: try adding fresh ginger for an even more delicious flavor.

This can be used in salad dressings or as a jam.
