✓ 1 Jalapeno or any green chili of your choice, finely diced
✓ Salt to taste
✓ Juice of half a lemon or lime
This is a really easy side to put together. Pairs well with any grains or as a side of
greens. Includes the daily dose of greens that is so beneficial and so flavorful with
just a few ingredients.
Instructions
Add the sweet potato and stems of kale to a stainless steel pan at medium heat.
Add a couple of tablespoons of water, cover and cook for 2-5 minutes.
Once sweet potato and the stems are partially cooked, add the kale leaves
Add the diced ginger and jalapeno.
Cover and cook for 2-5 minutes, until kale is sauted. Add 1-2 tablespoons of water as required to deglaze the pan.
Add salt as desired and the juice of lemon or lime.
Serve with Brown rice or any other grain and curried beans/lentils!!!
