  • ✓ 1⁄4 cup soy sauce or liquid aminos
  • ✓ 3 tablespoons apple cider vinegar
  • ✓ 1 teaspoon smoked paprika
  • ✓ 1 teaspoon cumin
  • ✓ 1 teaspoon garlic powder
  • ✓ 1⁄2 teaspoon liquid smoke (optional)
  • ✓ 1⁄4 cup nutritional yeast
  • ✓ 2 tablespoons maple syrup
  • ✓ 6-8 large oyster mushrooms

The finished Mushroom Bacon can be used in any way you might use traditional
bacon, such as chopped on a salad or baked potato, in a tofu quiche, in “carbonara”
pasta, and, of course, a BLT!

Will keep in the fridge for about 3 days, but is best eaten right after cooking.

  1. Combine all ingredients (except mushrooms) in a medium bowl and whisk to incorporate seasonings
  2. Wipe mushrooms clean and slice lengthwise into thin slices
  3. Lay mushrooms flat on a parchment-lined baking sheet and brush with sauce. No need to marinate as this will make mushrooms soggy instead of crispy.
  4. Heat oven to 350F/180C and roast mushrooms in the oven for about 25 minutes, flipping them over at about the halfway point
  5. Frying them in a pan is also an option, but a small amount of oil might be needed to keep them from sticking to the pan. Pan fry for about 2 or 3 minutes on each side, until they are as crisp as desired.
