Description

Original recipe from Forks over Knives with some modifications https://www.forksoverknives.com/recipes/vegan-burgers-wraps/vegan-sushi-tacos/

Taco filling :1 ½ cups cooked brown rice 1 can adzuki beans rinsed and drained 2 tablespoons maple syrup ¼ cup rice syrup

Mango Sauce: 1/1/2 cup fresh or frozen mango chunks 1 tablespoon lime juice 1 tablespoon sriracha or other hot sauce of your choice

Slaw recipe: ½ red cabbage ½ green cabbage 3 carrots shredded 3 radishes cut into matchsticks 1 large cucumber diced 1 Green onion chopped white and green parts 10 toasted Nori sheets 10 corn tortillas warmed Any other raw vegetable you would like to add. I like to add zucchini

  1. Cook rice according to package directions, in an instant pot, rice cooker or on the stove. Let rice cool for about 30 minutes.
  2. In a bowl mix rice and adzuki beans, add rice vinegar and maple syrup. Stir to combine
  3. In a blender combine mango, lime juice and sriracha and process until smooth.
  4. Toss shredded vegetables with about half of the mango sauce.
  5. Here you can look at the original recipe and cut the nori sheets to make taco shells or do what I did and just add the nori to the finished taco.
  6. If using the corn tortillas, put some of the rice/bean mixture in a corn tortilla, top with the slaw and some nori, add more mango sauce if desired.
