Baked Apple Bites

You will of course need apples. For each apple you will also need:

  • ✓ Few drops of lemon or lime juice
  • ✓ 1⁄2 t cinnamon
  • ✓ (optional) up to 10 raisins
  • ✓ (optional) few thin slivers of ginger – maybe 1⁄2” long and as thin as you can slice it (with an adult’s help)
  • ✓ (optional for caramel sauce) 1 T peanut butter (creamy or crunchy as you wish) and 1 T maple syrup
  • ✓ (optional for chocolate sauce) 6-10 chocolate chips

Preheat oven to 375F. For each apple rinse and then:

  1. Use an apple corer and carefully remove the center core. If you can, leave a bit on the end and, if not, stuff a bit back in the bottom to hold toppings. Ask an adult for help as you could hurt yourself if you're not careful with the sharp corer.
  2. Put the apple in an oven-safe bowl; the apple will bubble up liquid as it cooks so be sure not to use a flat plate
  3. Squeeze a few drops of lemon or lime juice in the cavity for a bit of flavor and to keep the apple from browning
  4. Sprinkle 1/2 t (or more or less as you prefer) cinnamon into the cavity or put in a cinnamon stick
  5. Optionally add to the cavity any toppings such as maybe ten raisins and/or a few thin slivers of ginger
  6. Once the oven is preheated, put in the apples and cook for 30-45m. You will notice apple juice bubbling out after about 20-30m. The more you cook it the softer the apple will be but the tougher the skin, which has a lot of beneficial fiber, will be. If you cook it for a longer time it will remind you of warmed applesauce.
  7. While the apples are baking prepare your optional sauces:
  • I love Mia’s caramel sauce that she shared in our August 12, 2021 birthday show (bit.ly/soManyKids1stBirthdayRecipes). I modified it for my apple bites; I use 1 T peanut butter and 1 T maple syrup and simply mix them together. You can warm the peanut butter a little bit first if you want.
  • For the chocolate sauce, melt chocolate chips. Chocolate burns easily; I melted mine in a warm oven at around 300F and kept an eye till soft, then mixed. My dad likes to put chips in a bowl and put that bowl in a bigger bowl of boiling water.

 

8. Remove from oven (wear a mitt and/or have an adult help) and let sit till cool enough to eat. If you are using sauces, cut the apple into pieces and pour on a bit of the sauce(s). Enjoy not just the apple but also the juice that will have pooled onto the bowl.
