When it is almost done, throw in any veggies such as broccoli, spinach, kale, peppers and continue boiling it all together for the last couple of minutes.
Then drain and rinse.
In the meantime – in a separate pot, add the chopped potatoes, carrot, onion and cashews with enough water to cover them and then boil them until cooked through.
To make the “cheese sauce”, add boiled veggies together with the water it cooked into a blender. Add the seasonings and blend.
Pour the “cheese” sauce over rinsed pasta and serve immediately.
To warm up leftovers, you might need to add a little water as the sauce will thicken.
