Carrot, Celery, and Pea Soup

  • ✓ 1 carrot, chopped into 1⁄4” discs
  • ✓ 1 stalk celery, chopped into 1⁄4” slices
  • ✓ 1⁄2 cup frozen or fresh peas
  • ✓ 1⁄2 cup chickpeas
  • ✓ 1⁄4 cup red beans (you can substitute another kind of bean)
  • ✓ 1/2 cup onion cut into 1⁄4” cubes
  • ✓ (optional) few leaves cilantro
  • ✓ Sprinkling of salt and herbs like basil, thyme, and smoked paprika
  • ✓ 1 to 11⁄2 cups water depending on how watery you want the soup to be
  1. Put all the ingredients in a pot and boil.
  2. Simmer on low for 15 – 20 minutes, stirring occasionally.

NOTES

Serves 2

You can add other vegetables but these are my favorites. Greens like chopped kale or spinach go well too.
