  • ✓ 2 vegan pie crusts (easy to find or you can make your own)
  • ✓ 5 c frozen blueberries
  • ✓ 1⁄2 c tapioca or corn starch
  • ✓ 1⁄2 c sweetener (date paste, maple syrup)
  1. Heat up over at 400°F.
  2. Place blueberries in a big bowl. Add the tapioca and sweetener and then mix all ingredients well.
  3. Place 1 pie crust in a pie dish and then add the blubbery mixture to it. Cover it with the second pie crust and fold in the edges. Lastly, make 4-5 slit cuts on top of the pie.
  4. Bake for 40-45 min.
