Peanut Butter Coleslaw

Veggies:

  • 1 cup baby carrots, shredded

  • 1⁄4 red cabbage – cut up

Sauce:

  • ✓ 1 T balsamic vinegar
  • ✓ 2 T peanut butter
  • ✓ 1 T maple syrup
  • ✓ 1 T black sesame seeds
  • ✓ 1⁄2 tsp ground ginger
  • ✓ 2 T apple cider vinegar
  • ✓ 1 pinch of pepper
  1. Cut up the red cabbage and put in a large bowl.
  2. Add in the shredded carrots.
  3. Mix it up.
  4. In a small bowl, add the sauce ingredients and whisk up.
  5. Pour sauce on the veggies and mix it all up.

NOTES:

Great to eat as a side or on top of a veggie burger or BBQ jackfruit sandwich!
