Tofu “Egg” Sslad

  • ✓ 2 extra firm tofu blocks
  • ✓ 1⁄2 cup vegan mayo *
  • ✓ 1⁄4 red onion
  • ✓ 1 cup celery
  • ✓ 1⁄2 cup fresh dill
  • ✓ 1⁄4 cup fresh parsley
  • ✓ 1 tsp Dijon mustard
  • ✓ 1⁄2 T onion powder
  • ✓ 1⁄2 T garlic powder
  • ✓ 1⁄2 Tsp turmeric
  • ✓ 1 tbs NY
  • ✓ 1 tbsp apple cider vinegar
  • ✓ 1⁄2 t lemon
  • ✓ 1⁄2 black salt *
  1. Drain and gently press dry tofu, then crumble it into a big bowl.
  2. Then mix in the rest of the ingredients.

NOTE:

- Vegan mayo is not mandatory to this recipe, however it does make it creamier
- “Black salt” is really pink in color; because of its sulfur content, its smell and flavor is reminiscent to that of eggs
