Shred carrots. Cut up any other vegetables that you will be using.
Spread hummus or bean spread thinly on one half of the tortilla.
Add carrots, and lettuce, spinach, or kale on the other half of the tortilla.
Roll up each tortilla, secure with 5 evenly placed toothpicks, and slice into 5 individual rolls per tortilla (one toothpick per roll). Or, cut each tortilla in half. (recipe from PCRM.ORG)
