Description

This is a yummy dish which is also very healthy and colorful. It’s good for lunch and dinner, and can be served warm or cold. (Serves 4)

  • ✓ 8 oz Whole Wheat Pasta (bowtie or fusilli pasta), but you can use any kind that you want, though it doesn’t work as well with spaghetti
  • ✓ 1 cup frozen peas (can be frozen, thawed, or warmed)
  • ✓ 1 cup frozen corn (can be frozen, thawed, or warmed)
  • ✓ 1 cup black beans
  • ✓ 1⁄2 cup marinara or other pasta sauce

Your choice of herbs (I like 1⁄4 teaspoon dried oregano and 1⁄4 teaspoon dried coriander. If you use fresh herbs, use three times the quantities.

(optional) 2T nutritional yeast if you want, you can used shredded vegan cheese instead

  1. Cook pasta until al dente (just cooked so when you bite it, it gives a little resistance; check the package for cooking time); drain
  2. Add all of the other ingredients and mix well
