  • ✓ 2 can black beans (drained and rinsed)
  • ✓ 2 cans sweet corn (drained and rinsed)
  • ✓ 4-5 tomatoes (diced)
  • ✓ 1 can olives (drained and rinsed)

Nacho Sauce: 3 cups cashews, 1 cup nutritional yeast, 1 whole roasted red pepper, 1 Tbsp. cumin, 1 Tbsp. garlic powder, 1⁄2 tsp (or more) salt, 4 cups water Optional toppings: cilantro, guacamole

  1. To make the nacho sauce, put all ingredients in a powerful blender and blend until smooth. Set aside.
  2. Spread the corn chips on a big tray.
  3. Drain and rinse the black beans and corn then spread them all over the chips.
  4. (At this point you can pop it in the oven for 2 minutes) Next, chop the tomatoes and cilantro and sprinkle them over the chips as well.
  5. Last, pour the nacho sauce and guacamole.

NOTES:
To make this a nut free recipe, use a cup of oatmeal or a cup of cannellini instead (flavor changes so you’ll need to adjust the seasonings to suit your taste)
