This easy pudding is great for summer when you don’t want to spend time in a hot kitchen. The silken tofu is perfect for creating a creamy pudding. As well as being delicious, this pudding is an excellent source of protein, fiber and antioxidants.

Ingredients
✓ 10 ounces silken tofu
✓ 1⁄4 cup maple syrup
✓ 1⁄4 cup cocoa powder
✓ 1 teaspoon vanilla
✓ 1 cup blueberries
Instructions
Combine first four ingredients in a high-speed blender until smooth. Pour into a mixing bowl.
Add the blueberries to the bowl and stir.
Serve into four small bowls and refrigerate at least four hours until firm.
