This delicious lemon pudding couldn’t be simpler to make and is one of the favorite recipes in the class I teach. It’s light and refreshing and an excellent source of protein, calcium and vitamin C.
Ingredients
✓ 1.5 cups (350g) silken tofu, drained
✓ 4 tablespoons agave syrup
✓ Juice and zest of 1 lemon
Instructions
Combine all ingredients in a high-speed blender, or with a stick blender, until smooth. Leave in the refrigerator for a few hours to thicken slightly.
Enjoy on its own or with Berry Chia Seed Jam (recipe below) or mixed with soy yogurt.
