Description

On a hot summer day, a cold fruit popsicle is a great way to stay cool make a variety of popsicles. I like to puree whole fruit and add lemon or lime for some acidity. This helps reduce an overly icy texture. Also adding fruit juice, like orange, grape or apple helps make pops that will melt slower. A combination of puree and juice mixed well helps with flavor and texture. You can add small or thinly sliced pieces of fruit like watermelon, strawberry, mango, pineapple, or kiwi.

You can purchase a variety of molds to make your popsicles. You can also use a paper cup and popsicle sticks. If using paper cups place pops in freezer, then in an hour add popsicle sticks.

I) WATERMELON LIME POPSICLE

 

  • 3 cups fresh watermelon
  • 1 – 3 tablespoons lime juice

 

II) PINEAPPLE KIWI POPSICLE

 

  • 3 cups fresh pineapple
  • 1 cup kiwi

 

III) CHERRY LIME POPSICLES

 

  • 3 cups fresh or frozen cherries
  • 1 – 3 tablespoons lime juice

 

IV) FRUIT AND JUICE POPS

  • ✓ 1 – 2 cups sliced fresh or frozen fruit (sliced strawberries, whole blueberries, whole blackberries, (or whatever fruit you like.
  • ✓ 1 cup apple juice, or white grape juice

V) FRUIT YOGURT POP

 

  • 3 cups fresh or frozen fruit of your choice
  • 1⁄4 - 1⁄2 cup vegan yogurt.

I) WATERMELON LIME POPSICLE

 

  1. Place watermelon in a blender and process until smooth. Add lime juice 1
    tablespoon at a time to desired taste.
  2. Pour mixture into mold and freeze

 

II) PINEAPPLE KIWI POPSICLE

 

  1. Place pineapple and kiwi in a blender and process just until the fruit is slightly
    blended. About 10 – 30 seconds.
  2. Pour mixture into mold and freeze.

 

III) CHERRY LIME POPSICLES

 

  1. Place pineapple and kiwi in a blender and process just until the fruit is slightly
    blended. About 10 – 30 seconds.
  2. Pour mixture into mold and freeze.

 

IV) FRUIT AND JUICE POPS

  1. Place sliced or whole fruit in the mold or paper cup.
  2. Pour juice until the mold or cup is 7/8 full. (leave a little room for expansion).
  3. Freeze

V) FRUIT YOGURT POP

 

  1. Puree fruit until smooth
  2. Mix yogurt with fruit and pour into a mold or paper cup.
  3. Freeze
