✓ 3⁄4 cup oat flour (you can also use whole wheat flour, or chickpea flour)
✓ 1 cup bread crumbs
✓ 1 teaspoon garlic powder
✓ 1 teaspoon onion powder
✓ 1⁄4 teaspoon salt (optional)
Instructions
Preheat oven to 400 degrees
Line a baking sheet with parchment paper or a silicone baking mat
Cut the onion into 1/3-inch-thick rings
In a bowl add oat flour and plant-based milk 1⁄4 cup at a time, until mixture is well combined and there are no lumps.
In another bowl pour the breadcrumbs, garlic powder, onion powder and salt if using. Mix until well combined
Dip onion ring into the batter until it is completely covered.
Then put coated onion ring in the breadcrumb mixture and coat completely with breadcrumbs.
Place onion rings onto the baking sheet. Continue until all rings are breaded.
Bake in the oven for 10 – 15 minutes until crisp and golden.
Serve with your favorite sauce!
Notes: I like to use a variety of onions, sweet yellow, red, white, and yellow onions. I like to use oat flour; however, the other flours work just as well. Here is a great sauce I like to dip my onion rings in!
