Description

A favorite at our home. Well liked by children and adults alike. Its easy to make and a healthy snack. It differs from its deep fried counterpart that it is baked and yet crispy and has the delicious taste of chickpea flour (besan). Easy to make, so try it!! Your family & friends will love them!

  • 1 Cup Onion, thinly sliced

  • 1 Cup Zucchini, grated

  • 1 Cup Carrots, grated

  • 1 Cup Greens (Spinach or Kale or Collard Greens or any greens of your choice)

  • 1⁄2 Cup Cilantro, chopped

Batter ingredients:

  • ✓ 1⁄2 Cup Garbanzo flour (chickpea flour/besan)
  • ✓ 1 tablespoon Rice flour
  • ✓ 1/2 teaspoon Turmeric powder
  • ✓ 1/2 teaspoon Red Chili Powder
  • ✓ 1/2 teaspoon Carom seeds or Ajwain seeds
  • ✓ 1/2 tsp Salt
  • ✓ 1⁄4 Cup Water
  1. Preheat the oven to 400 F.
  2. Mix all the ingredients until uniformly combined. Let sit for 5 mins. Add 1 tablespoon of water at a time as needed until combined yet a bit crumbly.
  3. Take about 1/8 C portions and pat into thickish patties. Don't pack them too tight. Leave it porous to make them crispy.
  4. Bake or airfry at 400F on a silicone mat (Silpat) for 10 mins then steps of 2 mins until golden brown. Broil for 1 min or 2 mins if required. Flip patties and repeat the baking. Baking time varies from oven to oven.
  5. Crispy and excellent! Makes a great snack or party food.
  6. Serve with spicy coriander chutney or sugar-free ketchup

Vary spices and binding flour with oat flour, all purpose flour, whole wheat flour, corn flour, corn meal, handvo flour etc. Experiment!
