Description

This is a quick and healthy dish for onion lovers! The entire family loves this recipe and it works great to make on a busy weekday night!

  • ✓ 2 Sweet Onion, quartered and sliced
  • ✓ 1 Red Pepper, cut in 1⁄2 inch strips
  • ✓ 1 Green Pepper, cut in 1⁄2 inch strips
  • ✓ 1⁄2 teaspoon ground cumin
  • ✓ 1⁄2 teaspoon paprika
  • ✓ 1⁄4 teaspoon chili powder
  • ✓ 1⁄2 teaspoon garlic powder
  • ✓ 1 package whole grain fajita wraps

Toppings:

  • Salsa (optional)

  • Fresh Cilantro (optional)

  • Lime wedges (optional)

  1. Cut up the onions and saute for about 3- 5 minutes on medium-high temp in a cast-iron skillet.
  2. Add in the peppers and mix well. Cook until some edges get browned a bit and onions start to get translucent.
  3. Add in the seasonings and mix up well. Cook for just a couple more minutes.
  4. Serve right away on whole grain wraps and add favorite toppings (see suggestions).
