Growing up, fried green tomatoes were a favorite of mine. Mom used to fry them in oil and I’d make sandwiches with them. Now, I can enjoy them and be happy that I am eating a healthier version of them.
Ingredients
✓ 2 medium green tomatoes - I use the ones that are a very light green with some light yellow: cut tomatoes into ½ Inch thickness, remove seeds, and with a vegetable peeler remove the skin.
✓ ½ Cup Corn Starch
✓ 1 cup Favorite Buffalo Sauce
✓ 1-2 Cups Vegan Bread crumbs
✓ 1 Large Zip-lock style bag ( I wash and re-use the same one for this recipe )
✓ Spray bottle with water/broth, or aquafaba
Instructions
After you have cleaned and peeled the tomatoes, place them in a ziplock bag.
Sprinkle the cornstarch in the bag and zip it to close, now shake the bag to coat the tomatoes
Pour the buffalo sauce into the same bag and shake to coat the tomatoes
Pour the bread crumbs in the bag and shake to coat the tomatoes
Place tomatoes in the air fryer at 400’ F and air fry for 10 minutes. Flip the tomatoes halfway through the cooking process.
Notes
To make tomatoes crisp without added oil, spray the tomatoes with water every 4-5 minutes. The steam helps to crisp them up.
You can use this same recipe for cauliflower, zucchini, eggplant, or artichoke hearts.
