Savory Broccoli Pancakes With Yogurt Sauce

Pancakes

  • ✓ 2 cups broccoli
  • ✓ 1 cup onion, diced
  • ✓ 2 cloves garlic, minced or pressed
  • ✓ 1/4 cup parsley
  • ✓ 1 1/2 cups rolled oats
  • ✓ 1/2 cup buckwheat groats
  • ✓ 1 teaspoon onion powder
  • ✓ 1 tablespoon baking powder
  • ✓ 1/2 teaspoon salt
  • ✓ 1 1/2 cups water or plant-based milk

Sauce

  • 1 cup plant-based yogurt

  • 1 teaspoon minced chives

  • 1/4 teaspoon garlic granules or powder

  • 1/4 teaspoon onion powder

  • 1/2 teaspoon salt

  1. Pulse the broccoli, onion, garlic and parsley in a food processor fitted with an S- blade until chopped.
  2. Place the dry ingredients, except for the pepper, in a blender and process into a flour.
  3. Heat a non-stick pan over medium heat, or line 2 cookie sheets with parchment paper and preheat the oven to 350.
  4. Put the flour mixture into a bowl, and stir the water or plant-based milk into the mixture.
  5. Gently stir the broccoli mixture into the flour mixture.
  6. Drop 2 tablespoons (1/8 cup) of batter onto the pan or cookie sheets until all batter is used.
  7. Cook on the stove about 2 minutes until the top is a little dry and you are able to flip them and cook them about 2 minutes on the other side, or cook in the oven for about 25 minutes or until dry.
  8. Top with yogurt sauce (recipe below)
  9. Stir together all sauce ingredients.
