Such a great “sauce” to serve on almost anything from veggies to grains to soups!
Ingredients
✓ 1⁄2 cup fresh basil
✓ 1 1⁄2 cup fresh baby spinach (packed)
✓ 1⁄4 cup nutritional yeast (to taste)
✓ 2-3 cloves garlic (to taste)
✓ 1⁄4 cup pine nuts (to taste)
✓ 2 tablespoons lemon juice
✓ 1⁄4 teaspoon salt
✓ Fresh ground black pepper to taste
✓ 1⁄4 - 1⁄2 cup veg stock
Instructions
Add all ingredients except veg stock to your food processor or blender. “Chop” ingredients on low or pulse until mixture is reduced some. Stop the machine occasionally to scrape down sides.
With the machine running, gradually add vegetable stock until you reach the desired consistency. Stop the machine occasionally to scrape down sides.
Variations:
· Replace the basil with other fresh herbs. Cilantro and Parsley work particularly well
(although will change the flavor)
· Replace the spinach with other mild fresh greens
· Substitute pine nuts with walnuts, pecans, almonds...
