Drain the tofu and cut it out in small cubes. Cut the cooked beets into small bite size cubes as well. If using fresh, you can add to a big salad bowl together with your favorite greens (I used spinach) and your favorite grain (I used quinoa)
Pour your favorite dressing over it. Balsamic flavored vinegars work well, but you can use whatever you like. I used a quick dressing by mixing up the ingredients bellow
