Italian Celery and Bean Salad

Description

This is a delicious chopped salad that can be used as an appetizer or as an entree salad topper.

  • 1 can of navy beans, rinsed and drained. (Reserve ½ cup of liquid from the can!)

  • 1 cup celery, finely chopped

  • ½ cup red onion, finely chopped

  • 4-5 stems curly parsley, finely chopped

Dressing

  • ✓ ½ Cup reserved liquid from the can of beans
  • ✓ 2 Tablespoons Lemon Juice
  • ✓ 2 Tablespoons Red Wine Vinegar
  • ✓ 2 Teaspoons Dijon Mustard
  • ✓ 1 Teaspoon Maple Syrup
  • ✓ 2 cloves of Garlic, minced or pressed
  • ✓ ¼ Teaspoon Black Pepper
  1. Strain the can of beans over a measuring cup, pour out extra so that you have ½ cup remaining.
  2. Now rinse the beans with cold water.
  3. Mix beans, celery, onion and parsley into a bowl.
  4. Place all dressing ingredients into a small blender or shaker.
  5. Pour dressing over chopped vegetables and beans.
  6. Stir and allow to marinate for at least 6 hours, best overnight.
