Description

Serves 6 to 8

  • ✓ 6 cups diced peaches
  • ✓ 3/4 cups old fashioned rolled oats
  • ✓ 1/2 cup cornstarch or tapioca starch
  • ✓ 1/2 cup Unsweetened applesauce
  • ✓ 1/2 raw brown sugar or 1/4 maple syrup
  • ✓ 1 tsp cinnamon
  • ✓ 1/2 tsp vanilla
  • ✓ 1/4 tsp ground ginger
  • ✓ Dash of cloves or nutmeg
  1. Preheat oven 350° / Baking time varies per oven, altitude or region. I bake for 30 to 45 minutes.
  2. Combine oats, 1/4 starch applesauce and 1/4 cup sugar or half of the maple syrup, and spices until it is well incorporated. Set aside.
  3. Place peaches in a baking dish, 1/4 cup starch , and 1/4 cup sugar or half of the maple syrup, stir until well coated.
  4. Crumble the topping mixture evenly over the peaches. Cover with foil and bake for 20 minutes. Remove foil and bake for 10 to 20 minutes or until golden brown. Remove from the oven and let cool.

Enjoy hot, warm, cold or with plant milk whipped cream or ice cream.
