Market Chopped Salad With Fresh Avocado Lime Vinaigrette

Description

I love going to the Farmers Market and choosing fresh local produce. This makes for great seasonal salads. Here I have listed a few of my favorite spring and summer ingredients. This salad creates a beautiful and delicious rainbow.

I) SALAD

  • ✓ 1 head of red or green cabbage, sliced and chopped
  • ✓ 2 zucchinis chopped
  • ✓ 1 orange pepper chopped
  • ✓ 1 seedless cucumber chopped
  • ✓ ½ cup shredded carrots
  • ✓ 1 cup cooked and chilled garbanzo beans
  • ✓ ½ cup beets, steamed, peeled and chopped
  • ✓ ½ cup chopped radish
  • ✓ 1 cup grape tomatoes, cut in half
  • ✓ 4 green onions, finely chopped
  • ✓ ½ cup sunflower seeds, slivered raw almonds or raw cashew pieces
  • ✓ ¼ cup fresh herbs: dill, cilantro, or basil, finely chopped

II) FRESH AVOCADO LIME VINAIGRETTE

  • 1 avocado

  • Juice of 1 -2 limes, approximately ¼ cup

  • 2 Tablespoons apple cider vinegar or white vinegar

  • Approximately 2 tablespoons water to desired thinness (optional)

  • Salt and pepper to taste

I) Salad

  1. Mix all ingredients in a large bowl.
  2. Toss in dressing, allow to sit for 5 minutes.

II) Dressing

  1. Blend ingredients together

  2. Store in the refrigerator
