Description

Serve for breakfast or alamode for dessert. I love this right out of the oven, the texture is like a homestyle bread pudding. Or let it cool completely and slice with a cup of coffee or tea. This is a versatile comfort breakfast or dessert.

I) Wet ingredients:

  • ✓ 2 flax eggs*- see note below
  • ✓ 3 small or 2 large mashed bananas
  • ✓ 3/4 cup non-dairy milk, flax milk works very well in this recipe
  • ✓ 1 tablespoon apple cider vinegar
  • ✓ 1/4 cup maple syrup
  • ✓ 2 teaspoons vanilla extract
  • ✓ 1 tablespoon lemon zest

II) Dry ingredients:

  • 1 ½ cup all purpose flour, white whole-wheat or gluten-free 1:1 work well

  • 1 ½ cup rolled oats

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1/2 tsp salt

 

III) Additional ingredients:

  • 1 cup blueberries

 

IV) Optional ingredients:

  • ½ cup dark chocolate chips

  • Banana slices to add to top of bread

  • ¼ pepitas, add a few into the recipe and sprinkle some on top

 

*Flax Egg:

1 egg equals = 1 tablespoon ground flax seeds + 3 tablespoons of water, mix and let sit for five minutes before using in a recipe.

This recipe calls for 2 flax eggs, so be sure to double this for this recipe.

  1. Preheat oven to 375*
  2. Make your flax eggs and set aside.
  3. Mash the bananas in a large mixing bowl.
  4. Add the rest of the wet ingredients, including your flax eggs. Mix all wet ingredients.
  5. In a small bowl, mix all dry ingredients. Add dry ingredients into the wet ingredients and mix just until together. Do not overmix.
  6. Add blueberries, and chocolate chips, seeds or nuts.
  7. Place batter/dough into a bread pan. I like to line my pan with parchment paper. Or feel free to use cooking spray.
  8. Bake for 55-60 minutes until a toothpick comes out clean. The bread will settle slightly while cooling. Serve hot as a bread pudding or allow to cool completely before slicing.
