Khichadi (Khichari / Pongal)

Description

An Indian comfort food made in many different ways but flavorful yet gentle on the digestive system is a favorite of young and old alike. It is a very simple recipe of just 5 ingredients but can be as simple or as grand as desired. Khichadi is a dish actively supported by the ancient Medical System of Ayurveda as well.

  • ✓ 1 cup brown rice
  • ✓ ½ cup mung dal(yellow split mung or green whole mung)
  • ✓ 1/8 teaspoon turmeric
  • ✓ ½ teaspoon cumin seeds
  • ✓ ½ teaspoon salt or to taste
  • ✓ 4 ½ cups water (ration of Rice + Dal to water = 1:3)

Optional:

  • ½ teaspoon ginger, finely chopped

  • 1 teaspoon black pepper, coarsely powdered

  • 1 carrot, grated

  • ¼ bunch of spinach, chopped

  1. Lightly dry roast brown rice and mung dal for a couple of minutes. Set aside.
  2. Add all the ingredients to a pot or a stove top pressure cooker or an instant pot.
  3. For stove top cooking: Cook on high for 10 mins or until most of the water has been absorbed. When water reaches to the level of the rice and dal lower heat to low and cook covered for 10 more minutes.
  4. Add grated carrots and chopped spinach and combine well.
  5. Turn off the stove and keep covered for 15 mins.

Your Khichadi is ready to enjoy!!!
