Basic Savory Grits

Description

Start with this basic recipe as a base for so much more!

  1. 3 cups water

  2. Salt to taste

  3. 1 cup polenta or grits

 

Optional Add-ins:

  • ✓ ¼ cup nutritional yeast
  • ✓ ¼ teaspoon garlic powder
  • ✓ ¼ teaspoon onion powder
  • ✓ ¼ teaspoon smoked paprika
  • ✓ ¼ teaspoon freshly ground black pepper

For Cream Grits add:

  • ½-1 cup plant-based milk (soy, almond, etc)

  1. Bring water and salt to a boil.
  2. Whisk in polenta/grits. Simmer on medium heat, stirring frequently until thick.
  3. Stir in any optional ingredients and continue to cook for about 2 more minutes to meld flavors.
  4. To make bread like grits: remove from heat and pour into a pan and allow to cool.
  5. For creamy grits, add additional liquid (plant-based milk or water) and serve warm as is or with favorite topping.
  6. Suggested toppings: Sauteed greens (kale, collards, spinach, etc), baked/smoked/BBQ tofu or tempeh; BBQ Jackfruit; roasted tomatoes; baked beans; roasted Brussel sprouts; caramelized onions; so much more!
