Bring water and salt to a boil.
Whisk in polenta/grits. Simmer on medium heat, stirring frequently until thick.
Stir in any optional ingredients and continue to cook for about 2 more minutes to meld flavors.
To make bread like grits: remove from heat and pour into a pan and allow to cool.
For creamy grits, add additional liquid (plant-based milk or water) and serve warm as is or with favorite topping.
Suggested toppings: Sauteed greens (kale, collards, spinach, etc), baked/smoked/BBQ tofu or tempeh; BBQ Jackfruit; roasted tomatoes; baked beans; roasted Brussel sprouts; caramelized onions; so much more!
