Description

This fresh Thai red curry paste is plant-based, oil-free and can be adapted to your tastes. Believe me, once you make your own homemade paste, you’ll never buy the pre-made stuff again. Use red curry paste to flavor all your Thai-inspired curries, stews, soups, and more. Freeze this paste and it’s ready anytime you are.

  • ✓ 1 tablespoon coriander seeds
  • ✓ 1 tablespoon cumin seeds
  • ✓ 1 tablespoon white peppercorns
  • ✓ 3 dried kaffir lime leaves, dried or fresh
  • ✓ 2 tablespoons minced ginger
  • ✓ 4 cloves garlic minced
  • ✓ 2 stalks lemongrass
  • ✓ 5 sprigs of fresh cilantro (coriander) – leaves and sprigs – chopped
  • ✓ 3 tablespoons diced shallots
  • ✓ 2 tablespoons lime zest
  • ✓ 2 fresh red chilis or ½ cup diced red bell pepper diced (remove the seeds if you don’t want too much heat)
  1. Toast the coriander seeds, cumin seeds, white peppercorns, and dried chilis in a small pan over medium heat for about 2 minutes. Be careful not to let them burn.
  2. Using a spice grinder, food processor or pestle and mortar, grind the spices (add the lime leaves if they are dry)
  3. Add the spices and the rest of the ingredients to a food processor, larger spice grinder, or use a pestle and mortar to blend all the ingredients into a smooth paste.
