Wash the potatoes and place in a pot of water.
Boil the potatoes until just fork tender.
Drain the potatoes.
Very carefully (not to get burned), cut the potatoes in half. Or, wait 5 -10 min to let cool first and then cut.
Add in the peppers, garlic, paprika and mustard seeds and mix well.
Place on a baking sheet lined with parchment paper or silicone mat.
Bake in a preheated oven at 400 degrees until some edges get browned, about 10-15 minutes.
Serve right away
