I used the beautiful and delicious Okinawa Sweet Potatoes to make this delicious Sweet Potato Pie Hummus. This is a great way to satisfy your sweet tooth while enjoying a nutritious snack. Enjoy!
Ingredients
✓ 2 medium sweet potatoes cooked and peeled (I used Okinawa sweet potatoes)
✓ 1 can of low sodium garbanzo beans, drained and rinsed
✓ 3-5 Medjool dates based on desired sweetness
✓ 1/2 cup boiling water plus extra water as needed
✓ 1 teaspoon vanilla extract
✓ 1 teaspoon cinnamon
✓ 2 tablespoons tahini (optional)
Instructions
Boil sweet potatoes approximately 45 minutes or until tender, drain and cool. Peel and chop sweet potatoes until ready to blend ingredients.
Drain and rinse garbanzo beans.
Place pitted dates in a bowl and cover with 1/2 cup boiling water. Allow to soak for 20-30 minutes; blend on high speed to form a date paste.
In a high-speed blender, add all of the ingredients beginning with date paste and tahini. Blend on high, adding extra water as needed to have a smooth consistency.
Serve with fresh fruit or use as a topping on Ezekiel English muffins for breakfast or toast. Makes a delicious snack!
