Roast the cauliflower in an instant-pot at 400 degrees or oven. Spray the inside with non-stick spray and lightly spray the cauliflower.
Season with salt and pepper and arrange the florets in a single layer on a large, rimmed baking sheet if using an oven. If using an instant-pot, a couple layers works well.
With either method, roast for 20 to 30 minutes, tossing halfway, until the florets are deeply golden on the edges.
