  • ✓ Approx. 1 1⁄4 cups (1/3 of a medium sized onion) sweet onion like Vidalia (you can use red onion instead) sliced thin (aim for 1/8” if possible).
  • ✓ 1 firm medium Valencia orange (you can substitute two medium tangerines; I generally like tangerines more than oranges but in this recipe the flavor of orange, especially Valencia, works better)
  • ✓ 3T balsamic glaze (you can substitute balsamic or ume plum vinegar, but the thick glaze works best)
  • ✓ 1 1⁄2 t pomegranate molasses (or 1⁄2 t maple syrup)
  • ✓ Approx. 2 dozen small fresh oregano leaves (about 3⁄4 T); alternately, you can use 3⁄4 t dried oregano. For a different version, try 2t fresh sage or 2/3 t dried sage.
  • ✓ Fleur de Sel (alternatives: sea salt flakes, kosher salt, or regular iodized table salt) to taste – a good place to start might be 3⁄4 t
  • ✓ Freshly ground black pepper to taste – try starting with 1⁄4 t
  • ✓ (optional) 1⁄2 t vanilla extract

Next, follow the steps to finalize your dish and finally be able to enjoy it!

  1. Separate the interior rings of the onion and cut the outer rings into 4 or 5 pieces to make them around 1 1⁄2” long.
  2. If using an orange, cut in half along the equator then remove the skin. Remove seeds then slice into 1⁄4” slices. When you get near the poles and it’s difficult to slice, simply separate out the segments. For each citrus ring, separate into groups of 2 or 3 segments. You should end up with 1 – 1 1⁄4 cups.
  3. If using tangerines, remove the skin and cut latitudinally into halves or thirds, then separate individual segments, removing seeds. You should also end up with a cup or a bit more.
  4. I don’t like vinegar in general but love it in this dish. Mix in the balsamic glaze or less thick vinegar.
  5. Mix in the rest of the ingredients This makes about 2 1⁄4 cups, enough for 3 or 4 small servings. It’s a surprisingly tasty salad that even those who don’t like onions, like my daughter, may like. However a little bit of raw onion goes a long way so I recommend these small servings.
