Dilip’s Beets, Beans, and Greens Recipe

Description

This is highly customizable; pick beans and greens that you like. You can use prepared beans and even pre-shredded fresh or frozen greens and canned beets if you are looking for something very quick and convenient.

  • ✓ Chickpeas – 1 cup dry chickpeas, soaked overnight and then drained OR 3 cups cooked chickpeas (such as approximately two 14 1⁄2 ounce cans
  • ✓ 2 medium beets, washed, peeled, and cut into 1⁄2” cubes
  • ✓ Rinsed greens; if available, use the beet greens hand torn or knife cut into approximately 4” square, and otherwise use 4-5 large kale or chard greens, stems removed, and then roughly hand torn into approximately 4” squares
  • ✓ 2 cloves garlic, roughly minced into 1⁄4” or smaller pieces
  • ✓ Just enough water to cover the chickpeas (if pressure cooking dry chickpeas)
  • ✓ 1 14 1⁄2 can of diced tomatoes (or use 2 medium Roma or other firm tomatoes diced to less than 1⁄2” cubes)
  • ✓ 1⁄2 cup onion cut into 1⁄2” cubes
  • ✓ 1⁄2 t lemon pepper
  • ✓ 1 t dried oregano
  • ✓ 1⁄2 t turmeric
  • ✓ 1⁄4 t salt
  • ✓ 1 T lemon juice

Next, follow the steps to finalize your dish and finally be able to enjoy it!

  1. If using dry chickpeas, put chickpeas and just enough water to cover them in a pressure cooker.
  2. Put beets, garlic, greens, and diced tomato into the pressure cooker and cook for 10m.
  3. After the cooking is done, wait a few minutes and then slowly/safely release pressure.
  4. If using precooked/canned chickpeas, mix them in.
  5. Mix in the onion, spices, and lemon juice.
  6. Serve with a grain and salad.

NOTES:-

  • If you don’t have a pressure cooker, follow the instructions but cook, covered, on a low simmer for about an hour.
  • Try other beans besides or in addition to chickpeas, but light-colored ones work best to avoid clashing colors on the plate. White cannellini beans, pinto beans, or great northern beans work well.
  • Feel free to add more garlic, a little chopped shallot, or hot sauce.
  • For lovely colors, use a combination of a variety of beets.
