Description

Yield: 12 Muffins                               

  • ✓ 2 very ripe bananas
  • ✓ 1 cup unsweetened applesauce
  • ✓ 1/2 teaspoon vanilla extract
  • ✓ 2 tablespoons cacao powder
  • ✓ 1/4 cup date syrup (less to taste)
  • ✓ 2 cups rolled oats
  • ✓ 1 smidgen salt (optional)
  • ✓ 12 oz. fresh raspberries, sliced strawberries or chopped cherries
  • ✓ 6 tablespoons of fruit sweetened raspberry jam, strawberry jam or cherry jam
  • ✓ 2 tablespoons cacao nibs
  1. Combine the first 7 ingredients, and let them sit for 15 minutes.
  2. Preheat the oven to 350 degrees, and line a muffin tin with parchment liners.
  3. Spoon batter into the muffin cups.
  4. Bake for 30 minutes and let cool.
  5. Combine the fruit and the jam, stirring well.
  6. Spoon the fruit onto the muffins.
  7. Sprinkle cacao nibs on top of each muffin.
